When we first tried this dish at BBQ Chan in Bukit Tinggi (see post here), we knew we had to learn how to cook it.
It’s super simple and delicious – fried eggs served on a bed of soft tofu then doused in soy sauce and Chinese wine gravy.
After a few attempts, we believe our sauce is quite close to BBQ Chan’s. The sauce should have a nice soy sauce punch blended with sweetness from the cooking wine.
It’s simple:-
1. Prepare sauce
2. Fry egg and steam tofu
3. Combine and serve!
Fry your eggs to your desired “done-ness” – Max likes his eggs with frayed burnt edges and a runny yolk while Ming likes her whites to remain soft and melty.
The punchiness of the sauce really complements the neutral taste profile of the tofu and fried eggs. Cook this with another veggie dish – and dinner is ready!

Fried egg with tofu in soy sauce [Recipe]

Ingredients
2 blocks of soft tofu, cut into cubes
5 eggs
2 tbsp light soy sauce
dash of white pepper
1 tsp sugar
2 tbsp sesame oil
3 tbsp shaoxing wine
1/2 tsp salt
Directions
- In a small bowl, combine the light soy sauce, white pepper, sugar, sesame oil, shaoxing wine and salt. Set aside.
- Cut tofu into cubes. Place in a bowl and steam the tofu for 2-3 minutes if you like. Remove excess water from the tofu.
- Heat up cooking oil and fry the eggs until your preferred done-ness – e.g. completely cooked or with runny yolk. Season your eggs as they cook with a pinch of salt and sugar if you like.
- Put tofu in a serving dish. Place the fried eggs on top of the tofu. Pour the sauce over the tofu and egg. Serve.
