If man’s base instinct is to desire for comfort food that appeases the tummy and nourishes the soul, Base Pasta seems to have it by the plentiful.

Chef Jay had always excelled in handmade pasta.
His dishes back at Back Alley (see our post here) were one of the more memorable ones we had in 2023 – so it was nice to see a few of the legacies being extended here.
Chef Jay’s greatest hits are here: Pork collar bucatini pasta and quinoa arancini, but we were more interested to try what’s new and fresh on the menu.

But first, let’s talk space.
If you’re looking for a casual dine out with friends, or an anniversary dinner – Base Pasta should fit the bill.
Reservation is recommended, and the best seats in the house are at the bar – which provides a great view of kitchen whipping up dishes for the patrons.
Charred cauliflower and deep-fried stuffed chicken wings

We started dinner with the Charred Cauliflower (RM24) with pesto diavola and Pecorino Romano.
What’s not to like? The florets were lightly charred for a nice crunch and seasoned well – with a touch or richness from the pesto and cheese.

The Deep Fried Chicken Wings (RM45) reminded us of K-style wings. The wings were stuffed to the limit with minced pork (yums), and deep-fried for a bit of crunch and paired with yuzu aioli, and house pickles for a balance of acidity.
Knock Gnocchi, who’s there?

For mains, we settled for Baked Potato Gnocchi with miso bechamel and beef brisket (RM46), and the Agnolotti Ricotta with spiced Nduja Calabria sausage (RM55).

The gnocchi had the requisite soft, pillowy and chewy texture that paired well with the rich and thick bechamel sauce. Cooked for 16 hours, the beef brisket was tender with lovely umami licks of yuzu.

Cheeseheads would appreciate the agnolotti stuffed with glorious ricotta. The cheesiness is tempered by the smokiness of crisp bacon and spicy sausage bits.

We also had a taste of the Deep Fried Hog Torchon – a new addition the menu that features minced pork and herbs served in a meat pie form, with a side of eggy sauce gribiche and greens.
Conclusion
If tasty homemade pastas is what you’re afta, you should definitely check out Base Pasta.
