Here’s something simple, quick and delicious! More importantly, we can cook extra portion for the next meal.
We loooooove garlic! We used two garlic bulbs for this pasta dish. We also added shallots for extra depth.
You don’t really need much seasonings and ingredients. The chorizos is already flavourful, with the broccoli to provide some levity (and fibre!) to the dish.
Add some salt, pepper and chilli flakes – voilà, we are done!
We used linguine for this pasta dish – spaghetti works great too! Also feel free to replace chorizos with your preferred sausage if you can’t take pork.
KEY TIPS:
* When cooking pasta, always add salt to the cooking water for the noodles to absorb the salty flavour.
* Follow cooking instructions on pasta’s packet – but always keep an eye out in order to not overcook the pasta. We like ours al dente, so we’ll remove the pasta as soon as it’s close to our preferred firmness.
* Retain some pasta water to add to the final dish for additional flavour and moisture.

Chorizo broccoli aglio olio [Recipe]

Ingredients
200g linguine (or any pasta of your choice)
2 bulbs of garlic, minced
5 shallots, minced
2 chorizo sausages (about 200g)
1 broccoli head (about 200g), cut into bite-size pieces
Salt, to taste
Ground black pepper, to taste
Chilli flakes, to taste
Directions
- Cook pasta as per packet’s instructions. I always add salt generously to the cooking water to yield flavourful pasta. Cook pasta until al-dente and drain. Retain some pasta water to be added into the pan later.
- Heat up oil in pan on medium heat. Add garlic and shallots and cook until fragrant.
- Add the chorizos and cook until fragrant. Add the broccoli.
- When broccoli is about 90% cooked, add the pasta into the pan. Season with salt, pepper and chilli flakes to taste. Add some of the retained pasta water to provide some moisture. Serve!
