Gong Xi Fa Cai and happy “Niu” year! Let’s cook chap chye!

Learn to cook Chap Chye!

We have cooked chap chye for the auspicious reunion dinner this year.
While it literally means “mixed vegetables” in Hokkien, this is not the regular carrot-snow peas veggie dish you see at chap fan (economy rice) shops.

Instead, this braised vegetable dish is usually cooked and eaten on the first day of Lunar New Year. Almost every family has their own version of chap chye.

Types of Chap Chye

The mix of ingredients differ depending on your dialect group – the Cantonese tend to use fermented red beancurd (nam yu 南乳) as an aromatic, while the Nyonya or Hokkiens prefer fermented yellow beancurd (taucu 豆醬). Some add gingko nuts, carrots, and even belacan! There’s also the Korean japchae 잡채 which bears similarity in name and ingredients.

However – there are a few key ingredients for chap chye – napa cabbage, mushrooms, beancurd skins, and glass noodles to absorb all the flavours.

Taucu and dried shrimps

For our recipe, we use taucu and dried shrimps as savoury aromatics. We also added black moss (fatt choy, which means prosperity in Cantonese) but some do omit this from their dish. While it contains some nutitions, it is tasteless and is usually added for its auspicious name.

Lily bulbs and beancurd

However, we especially love adding dried lily bulbs (kim chan in Cantonese) as they add texture and floral aroma to the dish. We also like to use a mix of beancurd skin and beancur sticks (fuchuk in Canto) for a more crunchier texture.

Tie lily bulbs into knots for texture
Mash taucu into paste

While the long list of ingredients may look intimidating, it’s actually not difficult to cook this dish. Our recipe breaks down the instructions into key steps – so you can get it done in less than two hours. Taste-wise, imagine a rich vegetable dish of varying but complementing texture and flavours. It tastes even better the next day!

To make it vegan/vegetarian, just omit the dried shrimps.

Tie dried lily bulbs into knots
Ingredients to soak first
Soak all ingredients separately, retain water used to soak shiitake mushrooms
Cut cabbage into bite-size piceces
Cut shiitake mushroom caps into thirds, and black fungus into bite-size pieces
Cut beancurd skins into bite-size sheets
Prepare shallots, garlic and dried shrimps
Mash taucu with pestle and mortar
All ingredients are prepped for cooking
Saute garlic, shallots
and dried shrimps first
Add the shrooms, beancurd, fungus, lily bulbs, red dates and taucu
Add the light and dark soy sauce, sugar, and sesame oil.
Mix well.
Add napa cabbage, water from soaking shrooms, and another 1-2 cups of water.
Mix well. Cover and braise for 20-30 minutes.
After braising, do a taste test and add salt or water if needed.
Add black moss and noodles and cook until soft. Noodles will absorb the gravy.

Easy step-by-step recipe to make delicious chap chye.

Ingredients

  • 700g napa cabbage, cut into bite-size pieces

  • 12 red dates

  • 10g dried black moss (fatt choy 髮菜) 

  • 3 tbsp cooking oil

  • To soak first
  • 30g black fungus (wan yee 云耳)

  • 80g dried beancurd skin and sticks (fuchuk or tau kee 豆皮)

  • 8 dried shiitake mushrooms, stems removed and cut into thirds

  • 30g dried lily bulbs (kim chan 金针菜)

  • 60g glass noodles/mung bean noodles (tang hoon 冬粉)

  • 30g dried shrimp, minced

  • Aromatics
  • 6 garlic cloves, sliced thinly

  • 4 shallots, minced

  • Seasoning
  • 2 tbsp fermented yellow bean (taucu 豆醬), pounded 

  • 2 tsp light soy sauce

  • 1 tsp sugar

  • 4 tbsp dark soy sauce

  • 2 tsp sesame oil

  • 2-3 tsp salt to taste 

  • 1 cup water from soaking shiitake mushrooms 

  • 1 cup water

Directions

  • Soak ingredients
  • Soak all the “soak ingredients” in water in separate bowls until they soften – for about 20-30 minutes. 
  • Before soaking dried lily bulbs, tie them into knots. 
  • After soaking, cut black fungus and beancurd skin/sticks into bite-size pieces. 
  • Remove stems of shiitake mushrooms and cut the caps into thirds. Retain the water used to soak shiitake mushrooms. Water used to soak other ingredients can be discarded.
  • After soaking, mince the dried shrimp.
  • Prepare other ingredients
  • While soaking the ingredients above, cut napa cabbage into bite-size pieces. 
  • Also, mince shallots and sliced garlic into thin slices.
  • Use a pestle and mortar to mash the taucu into a paste. 
  • It’s fry time!
  • Heat up cooking oil in a wok over medium high heat. Fry the garlic and shallots until fragrant for about 30 seconds. 
  • Add the dried shrimps and fry until fragrant. Then add the taucu paste.
  • Add the black fungus, beancurd skin, shiitake mushrooms, dried lily bulbs, red dates and napa cabbage. 
  • Add the light and dark soy sauce, sugar and sesame oil. Mix well and finally add the water retained from soaking the shiitake mushrooms, and another 1 cup of water. 
  • Let’s braise and serve!
  • When the liquid begins to boil, reduce to low medium heat. Cover with lid and let it cook for 20-30 minutes. Check and stir occasionally, and add water if necessary. 
  • When napa cabbage has softened, do a taste test and add salt or water if necessary. 
  • Finally, add the black moss and noodles. Mix well. The noodles will absorb the liquid and flavours. Cook for about 3-5 minutes until moss and noodles have softened. 
  • Transfer to a large dish and serve!

[Muslim-owned] Sang Kout Cafe is a quaint little c [Muslim-owned] Sang Kout Cafe is a quaint little cafe located in Pekan Sungai Besi, Kuala Lumpur. ☕️🍃

This cafe was a lovely find for us as Pekan Sungai Besi felt like a town untouched by time with its two-lane streets, pre-WW2 shoplots, central wet market and old shops. 🏬

In some ways, Pekan Sungai Besi reminded us of the central town areas in Kuala Kubu Bharu, Selangor and Bidor, Perak. 

Pekan Sungai Besi used to be the central hub of mining activities ⛏ back in the days - and is only a 20-minute drive from the KL city centre.

We were here on the second day of CNY to take a break from the Chinese food and festivities. 🧧🧧

Thanks to the lovely weather, we had a good time savouring the Pandan Gula Melaka Cake (RM11.90) and Latte (RM7) as we surveyed the streets from the al-fresco seating area. 

I supposed the cafe name is accurate, as we found ourselves "tersangkut" in time as we were transported to the Old Malaya days.

Located off Lebuh Chulia, Moh Teng Pheow has been making nyonya kuehs since 1933. 

This establishment was set up by Mr Moh (of which the place is named after), who used to supply kuehs to various bicycle peddlers back in the day. 

Now operated by the third generation - the kueh factory/canteen continues to dish out more than 20 varieties of Nyonya kuehs on a daily basis as well as other local delicacies. 

Our favourites were the Kueh Bengka, Pai Tee and Seri Muka.

Siew yoke or Chinese roast pork belly is a staple dish in many Cantonese restaurants around the world 🌎👲🧧.

Along with char siew and roast chicken, it is considered a part of siu mei 燒味 or roasted meat dishes in Cantonese cuisine. 

So what are the qualities of a good siew yoke? 
✅ A good siew yoke should have crispy and crackling skin. 💢
✅ The meat should also be tender and well-seasoned, but never too salty. 😘
✅ A good pork belly cut should have a good ratio of fat-to-meat - preferably with three distinct layers of skin, fat, and meat (三层肉)👌.

Here's our recipe to make siew yoke with key tips to get crispy and crackling skin, while ensuring the meat remains tender and juicy. 🥰🥰

Instead of fermented red beancurd (nam yue or 南乳 in Cantonese), we like to use minced garlic as the main aromatic for that distinct, umami, garlicky flavour.

We stumbled upon this hole-in-the-wall coffee spot We stumbled upon this hole-in-the-wall coffee spot when exploring Zhongshan Annexe the other day. 🕳

CCC is a pop-up stall offering Coffee, Chai and Chocolate ☕️🫖🍫in an al-fresco passageway called Kantata. 

The place is quirky as the coffee is reliable. We enjoyed the Special White (RM15) featuring the Pink Panther beans from JWC. The anaerobic process (our favourite at the moment) really brings out the sweetness of the beans with strawberry and candy notes. We previously had the Pink Panther at Underscore Coffee. 

Prana Chai (RM14) is a low-key masala tea, while the Iced Dark Choc (RM12) is a decent thirst-quencher.

The folks at SHE Bakes KL were so kind to send these delicious CNY cookies our way. 

If you follow us long enough, you'll know that we are big fans of her Sea Salt Brownies. 😘 And she truly did not disappoint with her CNY cookies as well.

We truly think the Pineapple Round Round Cookie 🍍🍍is the best we've had this year. The pastry is remarkably soft, flaky and buttery (but not too powdery or undercooked like dough). The pineapple jam has the right amount of sweetness and tart, and is sufficiently moist. 

However, our favourite is the Hae Bee Hiam (dried chillies shrimp) 🍤🌶cookies. They are so savoury and umami-rich thanks to the dried shrimp and spices, with a good amount of heat from the chillies to tantalise the palate. This is the BEST cookie we've tasted this year! ❤️❤️

Operating from 6pm until late from Thursdays to Saturdays - Alta offers a more intimate setting compared to the day when the lights are dimmed.

Nevertheless, the atmosphere remains informal (perfect for a catch-up with close friends) and the service remains friendly and attentive. 

The dinner menu rotates and changes regularly. This round, we savoured the Cheese on Toast, Gnocchi, and Angus Striploin 🧀🍝🍖.
